Banana Walnut Muffins Recipe

I absolutely love baking and when there are banana’s lying around that have ripened there’s no better time than this to bake some and make some. Here is the recipe for banana walnut muffins. You can replace walnuts with any other nuts of your choice.

Banana Walnut Muffins

Total time: 45 min

Makes: 8 regular sized muffins

Here’s what you need:

  • 2 ripened bananas
  • 2 tablespoons + 2 teaspoons melted butter
  • 6 tbsp granulated sugar
  • 1 egg, beaten
  • 3/4th tsp vanilla extract
  • 3/4th tsp baking soda
  • pinch of salt
  • 3/4 cup flour
  • 1/2 cup chopped walnuts

Here’s what you do:

  • Pre heat oven to 360 F
  • Mash the bananas in a large mixing bowl with a fork. Mix the butter into the mashed bananas with a wooden spoon.  Mix in the sugar, egg and vanilla.  Add the baking soda and salt.  Add the flour and mix until just incorporated.  Fold in the chopped walnuts.
  • Pour mixture into prepared muffin pan lined with cupcake liners until they are 3/4th way full.  Bake 25-30 minutes until golden brown or once a toothpick inserted into the center of the muffin comes out clean or until the top of the muffin springs up on pressing.  Allow to cool on a rack. Enjoy !

Note: DO NOT over mix the batter like you do for cakes. The muffins get tough and lose their softness if the batter is over mixed.

Prepare a day before the planned consumption for better flavor.
