Veg Frankie / Kathi Roll Recipe

Vegetable Frankie / Kathi rolls are very common back in India as well as here in the United States. This indian recipe can be made with variety of stuffings like chick peas, cheese, vegetables, paneer and many more. Today I am going to share with you a recipe that my mom recently shared with me. The twist is that these frankies are deep fried as opposed to the traditional way of making them. So let’s start making these tasty deep fried vegetable frankie rolls. I tried them out and they turned out to be absolutely delicious. I am sure you’ll love it.

Veg frankie / kathi rolls

Here’s what you need:

For the stuffing:

  • 1 carrot, thinly sliced into 1 inch long pieces
  • 1/2 cup cabbage, thinly chopped
  • 1 green bell pepper, thinly sliced into 1 inch long pieces
  • 1/2 onion, thinly sliced
  • 1 potato, boiled and mashed
  • 3-4 tbsp shredded cheese
  • 1 green chilly finely chopped
  • 2 tbsp oil
  • 1 tbsp red chilly sauce (or to taste) – I used Ching’s
  • 1 tbsp green chilly sauce (or to taste) – I used Ching’s
  • Salt to taste
  • Pepper to taste

For the dough:

  • 1 cup whole wheat flour / roti flour
  • 2 tbsp gram flour (besan)
  • salt
  • 1 tbsp oil

Here’s what you do:

For the stuffing:

  • Heat 2 tbsp oil in a pan.
  • Add in the onions and cook for 2 min on medium flame.
  • Add in the chopped green chillies and mix till well combined.
  • Then add in the vegetables – cabbage, bell pepper, carrots and let it cook covered for about 4 – 5 minutes. Add in the mashed potatoes and mix well.
  • Now add the red chilly and green chilly sauce according to your taste and mix well.
  • Add in the cheese and take it off the stove.

For the dough:

  • Prepare the dough a little firmer than a roti dough. To do this, mix in the wheat flour, gram flour, salt to taste and oil and form it into a dough a little firmer than a roti dough.
  • Let it sit for 20 min and divide the dough into a little smaller than golf sized balls.
  • When you are ready, roll the dough balls into flat rotis and stuff in the prepared stuffing.
  • Wrap both ends of the roti one over the other and seal the remaining two ends such that the stuffing does not overflow.
  • Heat oil just enough to deep fry these. Deep fry till golden brown.
  • Serve it with tomato ketchup or any other chutney/dipping sauce you’d like.
